We've been playing with a new set-up at the roastery, and we think it's worth showing you properly. Orea's O2 dripper, paired with the Neo Negotiator and Sibarist's FAST filters - a combination built for anyone who wants more control over their pour, not less.

We filmed the whole process, start to finish, so you can see exactly how it comes together.

The Negotiator

Its job is simple in theory: shape a flat-bottom filter so it hugs the walls of the O2 perfectly, cutting down on bypass and forcing water through the coffee bed rather than around it. A small tool doing a lot of quiet work.

The Sibarist FAST filter

This is where things get interesting. Sibarist's FAST paper is made mostly from abacá fibre, combined with FSC-certified European pine - a different make-up to your standard filter, and it shows in how water moves through it. It's noticeably more permeable, flowing somewhere in the region of 15-40% faster depending on grind, ratio and pour technique.

What that means in the cup: less choking on finer grinds, less puddling, and a lot more responsiveness to how you pour. Pour fast and turbulent, or slow and controlled - the filter keeps up either way, which hands more of the extraction back over to you rather than the paper.

O2, Negotiator, FAST filter - each one on its own is a small upgrade. Together, they add up to a properly clean, well-controlled cup, and a pour-over process that rewards a bit of curiosity.
