This coffee comes from the Santa Fé farm in Motozintla, near the Guatemalan border—an area that was part of Guatemala until 1824. The farm, founded in 1855, is owned by the Muguira family and managed by Jorge Arreola Nava, a cousin of Demetrio Arandia Muguira, who created the Mountain Water decaffeination process.

Like the Swiss Water Process, the Mountain Water process involves soaking the beans in water with dissolved coffee compounds, except for filtered out caffeine. This allows the beans to lose caffeine while keeping their flavour intact, without using any chemicals not naturally found in coffee.
