The Beneficio La Estrella coffee mill was founded in 2013 in the department of Nueva Segovia, near the Honduran border. The mill is located in Ocotal, a valley surrounded by a number of well-known coffee producing municipalities including Dipilto, Macuelizo and Mozonte y Jalapa.

The coffee from the mill is taken from 126 producers in the department. The seed is fully washed at micromills at each farm and then naturally fermented in cement tanks for 18-30 hours. It is then dried on raised beds under shade at the central mill in Ocotal.

This is our first single origin from Nicaragua for a number of years - the florals and texture gave us a really pleasant surprise on the cupping table!
